Cornflake Cookies

1 ¼ Cups So Sweet Xylitol
2 ½ Cups coconut
¼ teaspoon salt
1½ Cups Cornflakes
3 large eggs
½ teaspoon vanilla

Whip 3 egg whites until stiff.
Add ½ teaspoon of vanilla extract. Stir in the dry ingredients until well combined. Drop teaspoons of dough on an un-greased cookie sheet. Bake for 15 minutes at 165˚C.
